Immersive Learning Projects

As one of our students, you will have the opportunity to gain hands-on experience helping solve real-world problems while earning course credits through immersive learning projects.

Our department’s faculty members have previously coordinated projects tailored to our own field, but you will also have the chance to work collaboratively with students and faculty from other programs around campus

Betsy's Best, Food Science and Nutrition Sensory Research & Development Project (Fall 2017)

This immersive learning project aimed to develop recipes for patients with specific disease states using Betsy’s Best nut and seed butter products.

Students determined which chronic disease to investigate and designed, through an iterative process, a set of recipes and educational materials for the collaborative partner. Research findings were evaluated by the project partner, Betsy Opyt, Ball State alumna, and the professor.

The top team won a trip to the FNCE Conference and disseminated findings at the annual Academy of Nutrition and Dietetics national conference in Chicago.
